Is it possible to add a time and date stamp on a exported Enscape-animation, like on the Revit solar study animation?
Not yet I'm afraid. Your feedback is already filed as a feature request on our agenda though - I've added your upvote and voice to the topic! At the moment the time and such would have to be added in a video editing software afterward post process.

You can create a timestamp when rendering a solar study simply by doing a live screen capture and changing the time of day manually in Enscape (navigating live). It takes a few tries to get the results in a very smooth way but after a few tries it can be done.

Similarly, (for Revit) there are branching workflows using tools like Image-O-Matic or Dynanimator, but yeah, it would be nice if Enscape offered this OOTB
