I'm going to put my most used assets into a blank project (on a machine that is working) and just copy paste from there until this is fixed.

You can copy and paste from one Revit model to another if both models are open in the same session of Revit but not if they are open in separate sessions.
I believe this is an issue with a recent update. I opened an older project up, where I had old enscape assets. I was unable to bring in any new assets from the library. I deleted my 3D view, created a new default view, changed my workplane, tried "place asset on surface", rebooted my machine, checked for updated, and still was unable to bring any new assets in. Working in Revit 2020.2. I have not tried to duplicate this error in any other versions.
Right away, do you experience this with our service pack update as well? If you're not sure if you're up to date simply run the installer again and overwrite the existing one - even better though: Uninstall the current version of Enscape and your machine and then our latest release once more.
And even though it should not be related to this issue, make sure that your graphics card drivers are still fully up to date, by acquiring them directly through either the NVIDIA or AMD homepage as well.
For now, it would also still be ideal to receive a Feedback report from anyone still experiencing this problem - the more log files and machine information we have available, the more quickly we can find the cause behind this. In the Feedback form itself please briefly add a link to this thread or at least the title into the subject field.

Happily my issue seems fixed with the 3.1.1+53717 update.
Mine did not. Graphics card drivers updated to latest. (Using Quadro M1200). No resolution.

I can copy the assets within the existing projects but cannot upload it from the library but only SOME of them - after trying for a while I see it happens only when the asset's name has some ":" in the name.
