Enscape does not support the water material type on vertical surfaces. The three solutions to this are a regular texture that looks like water, a mp4 video texture, or rotate the surface 3 degrees off vertical to get the texture to show. Those may work but they do not always fit the bill. This has been brought up a bunch of times before for years and nothing has been added yet. See RE: Water as fountain or vertical flow, RE: Water feature/ waterfall, Water material, Water - Liquid improvements, RE: Water refraction, ect.
You could try making something from "glass" and applying a moving water like normal map to it

Forwarding your Feedback as well to allow for easier vertical water in Enscape - thanks a lot, and thank you for sharing your tips here for everyone else to see.
I see the vertical waterfall has been an unresolved topic since early 2019. It's almost 2022.
Can Enscape make this a priority?
Need to make it work for Revit.

I will forward your Feedback as well, thank you - Unfortunately, there is no estimation from our side yet regarding when this will be added yet.
