I am trying to manipulate the render by using the "white mode". However the places where I have applied water material cannot be rendered with white colour. It is still the same as realistic render, no change at all. Is there anything I am missing? Is there any possible settings in the material editor?

I'm afraid if you select a white color it will simply display how water would usually look naturally which is blue through reflecting the sky so to say - This means that at least currently it's not possible to color the water material white.
You could also perhaps fake it using a "Displacement map" of a water-like texture, which results in something like:
Of course depending on your preferences you may want to select a different Displacement map and finetune the material that it'll look even better. Simply lookup "water displacement texture" and look at the images with the search engine of your choice, probably Google. Since it's also just a workaround, it may not look great depending on the time of day and such, as it obviously misses reflections and transparency.
Finally you can also file this inquiry as a feature request via our product portal, this way product management is also able to track the further demand for this.
