I would really love a function that would enable the grass to be 'flattened' underneath slabs. I am new to the software so there might already be a solution to this. However, at the moment, I am spending a lot of my time adjusting the topography to lower it below slabs so you cannot see the grass poking through.

In this case, you could make use of the "Split Face" tool of Revit:

Split face will work if he build the topography using floors/roofs etc.
If the topo is build with the Revit topography tool, split face unfortunately won't work. But he could use 'subregions' (basically the 'split face' tool for topography) to overwrite the material of the topography under the building: https://www.youtube.com/watch?v=Uk2LHz6O1FY

or just do a building pad under your slab...
